This zesty Zucchini Carrot Salad recipe is guaranteed not to disappoint you or your guests as it is an nice-looking lunch to dish out after a hot summer?s day! No cooking is involved; consider serving it with bread, if so desired.
It?s good when I find a meal where the foods compliment each other because it make thing easy my life by knowing what to serve with what. Of course I don?t have to glue to any one meal plan; I can mix and match the main dishes and sides, but a lot of the time I?m in a hurry and don?t have a lot of time to think about it. I already have quite a few meals like this up my sleeve, but when I find a new one to add to my collection I get delighted because it adds a little more diversity to our meal ranges.
Item:
one ? bunch of romaine lettuce, cut into quarter sized slices
one ? medium head iceberg lettuce, cut into quarter sized pieces
two ? standard or one large zucchini, sliced thinly
three ? green onions, sliced
one can ? 6 oz. of pitted ripe olives, small, drained
one cup of thinly sliced or chopped carrots
1/2 cup of grated Parmesan cheese
1/2 cup of finely chopped bacon
1/2 cup of Italian dressing
Directions:
Toss all the things together in a large bowl except for the salad dressing and the chopped bacon.
Pour dressing over the salad and mix.
If required, shower liberally with bacon.
Portions:
6 to 8 people
Substitutions:
Select imitation bacon, low calorie Italian, Caesar or Greek dressing

You could also consider adding basil, parsley and cherry tomatoes to the salad to give it a richer, more robust Italian flavor:
If Wanted, Add:
one cup of cherry tomatoes, divide in two
one tbsp. of parsley
Sprinkle crushed, dried basil over the salad
